Baker Pricing Clinic: templates, local benchmarks and real-world examples
Problem: bakers often underprice because ingredient lists don’t translate into true unit costs once yield, waste, labor, overhead, packaging, taxes and delivery are included. I’m starting a focused thread to collect practical, copy-able pricing sheets, simple formulas, and real local examples you actually use for retail items and custom/event work.
What to share (please include at least city/region):
- Bakery type (retail counter, wholesale, cottage, home-based, cake studio)
- Product (e.g., sourdough loaf 900g, dozen cupcakes, 3-tier wedding cake)
- Batch yield and % waste
- Ingredient cost per batch and cost per unit (show calc)
- Labor estimate (minutes/hours) and labor rate used
- Overhead allocation method and $/unit (rent, utilities, insurance, equipment amort.)
- Packaging, delivery, tax treatment (included/excluded)
- Final retail price charged and markup method (multiplier, keystone, cost-plus %)
- Any minimums or flat fees for custom work and pricing rules (e.g., minimum charge = 3 hrs labor)
- Link or attach spreadsheet / calculator (CSV/XLSX/Google Sheet) if possible
Quick formulas you can copy/paste:
- Ingredient cost per unit = total ingredient cost per batch / yield
- Labor cost per unit = (total labor minutes ÷ 60 × labor rate per hour) ÷ yield
- Overhead per unit = monthly overhead ÷ expected monthly units (or allocate by labor hours)
- Total cost per unit = ingredient + labor + overhead + packaging + delivery + taxes
- Retail price = Total cost per unit × markup multiplier OR Total cost per unit + desired margin
- Custom minimum = max(total calculated cost + profit buffer, flat minimum, time-based minimum)
Suggested columns for a shareable spreadsheet: Region, Product, Batch size, Yield, Ingredient cost (batch), Ingredient cost (unit), Labor minutes (batch), Labor rate/hr, Labor cost (unit), Overhead/unit, Packaging/unit, Delivery/unit, Taxes, Total cost/unit, Price charged, Markup method, Notes, Link to file
Ask: paste one real example from your bakery (with region) — include your sheet or CSV if you can. Other bakers: please review examples, point out missing costs, suggest alternative overhead allocations, and share local benchmarks or typical markups in your area.
Goal: build a small library of working templates and real-world benchmarks that others can copy/adapt. No need to be perfect — first-hand examples and spreadsheets are the most useful.
